Yummy...Lemonade Bundt Cake
Here's the Lemonade Bundt Cake recipe I promised. I am thinking of using it as one of my summer cookout desserts with strawberries, blueberries and whipped cream tucked in the center to enhance the yummy factor and give a summery red, white and blue theme to the table.
I lightly glazed this cake with a powdered sugar, lemonade and milk blend (sugar restrictions in our home) but I do give you a recipe for a delicious Buttery Lemon Glaze below!  I love this  cake...it's moist with a subtle lemon flavor.


Lemonade Bundt Cake
2 sticks of butter - room temperature
2 cups of sugar or Splenda blend
5 large eggs
1 cup milk (I used 2%)
1/2 cup of lemonade ( I used homemade lemonade not the powder)
2 T. fresh grated lemon zest
3 cups self-rising flour* (the recipe called for cake flour but I didn't have it on hand).
*NOTE- if using cake flour of plain flour, you will also need to add 1/2 t. salt, 1/2 t. baking soda, and 1 T. baking powder or your cake will not rise. 
Preheat your oven to 350 degrees (170C). Spray bundt pan with baking spray or butter and flour it (the way our mommas did it.)
  • Beat butter and sugar in large mixing bowl until combined. Add eggs, milk, lemon zest and beat until blended. 
  • Gradually beat in flour (sifted flour mixture if using cake flour or plain flour*). Pour into prepared bundt pan. 
  • Bake 45-50 minutes. Check that knife inserted comes out clean. Cool in pan 5 minutes, then invert on cake plate or wire rack, if you prefer.
Lemony Butter Glaze - 1/4 c. melted butter, 2T lemon juice (fresh is best) and 2 cups of confectionery sugar.
Pictured Glaze -  Due to sugar concerns the glaze I actually whipped up was without benefit of a recipe using approximately 1 cup of powdered sugar, 2-3t. of lemon juice and just enough milk to bring it to glaze consistency. Add a tablespoon of milk at a time so it doesn't get too thin. 


This is especially delicious served warm with a cup of coffee, the second best beverage in the the world! (Sweet tea is 1st)
