I took some liberties in naming my dish. I don't use the typical thin Chinese noodles used in Lo Mein, but Dreamfield's Low Carb Spaghetti instead. I also steamed cooked the veggies in the microwave rather than stir-frying them, but other than that I feel okay calling this a Lo Mein dish. 
This Lo Mein dish is the 2nd in my list of Top 5 easy dishes! I think it's a great meal if you're a short on time and to want to prepare something that's different, easy, quick and healthy. In case you missed it, number 1 in my Top 5 easy dinner list was Crock Pot Turkey Breast.

First, I used thawed, boneless, skinless chicken breasts, fried 6 minutes each side and cut into bite-sized pieces. In a real pinch, the pre-cooked chicken strips from the freezer section at the local grocery store works great too.
I use Asian-style vegetables (green beans, broccoli, onions and mushrooms) found in the freezer section and prepare them using my microwave steamer. It is not necessary that you use a steamer, you can follow the directions on the bag and microwave them in a bowl or stove top cook them. As far as the veggies go, you can use whatever your family prefers, I also used cauliflower, carrots and broccoli too. 
While the veggies steam, cook your spaghetti according to directions and drain.  Once the pasta, chicken and veggies are done. I mix them all together in the pasta pot with a 1/2 cup of peanut sauce. I used the bottled peanut sauce (House of Tsang - Bangkok Padang Peanut Sauce) but you can easily make your own (the bottled sauce is mildly spicy).

Peanut Sauce
1/4 cup peanut butter
1/4 cup water
2 tbsp soy sauce
2 tbsp lime juice
2 cloves garlic, minced and crushed
2 tbsp rice vinegar
Cook ingredients in a small sauce pan until smooth and creamy. It may be necessary to thin with a little water depending on how you are using the sauce. This Peanut Sauce recipe is from About.com
 If desired, garnish the dish with toasted crushed peanuts, chow mein noodles or sunflower seeds.

  5. I'm making something like this right now!!! I love peanut sauce... the main difference between my recipe and yours is that I use ginger and sriacha hot sauce in mine... and 2 parts crunchy peanut butter and 1 part smooth. :) Delicious looking recipe. Thanks for linking up to Friday Potluck.

    This recipe is a recent add to our dinner menu. The fellas have to spice theirs up after the fact around here however, since I can't handle it the heat! I like the idea of adding a blend of crunchy and smooth peanut butter. I will try that! Thanks for stopping in!!! :)
