Crock Pot Morning Casserole

Morning Casserole with sausage and toast
This is a hearty morning meal to break the fast. It has all of the traditional elements of a big weekend breakfast, but the added convenience of the crock pot doing all the work! This is a large casserole and would serve 6-8.

A great recipe to use when having overnight guests, the aromas of breakfast fill the house before anyone gets up after a late night together. Add a fresh pot of coffee and/or a batch of sausage gravy to the menu, and there is something for everyone in this big winner with friends and family.

Bacon, Ham, Onion and Green Bell Pepper layer
Crock Pot Morning Casserole
Ingredients
1 32 oz. bag of frozen hash browns
1 lb of diced bacon (cooked & drained) or 1 lb. cooked ham, cubed (we did half ham & half bacon)
1 medium onion
1 green bell pepper, diced
1 1/2 c. shredded cheddar or Monterey Jack cheese
1 dozen eggs
1 C. milk (we used half & half)
1 t. salt
1 t. pepper or to taste

Morning Casserole assembled and ready
to cook while you sleep!

Directions
Spray crock pot with butter cooking spray or line with crock pot liner. Place a layer of frozen hash browns on the bottom of the slow cooker. Then layer bacon, onion, green pepper and cheese. Repeat the layering process two or three more times, ending with a layer of cheese.
Beat the eggs, milk, salt and pepper together.

Pour over the layered crock pot mixture. Cover, and turn crock pot on low for 10-12 hours.



Morning Casserole ready to serve!
