Homemade Creamy Chicken Noodle Soup

There's nothing more soothing on a chilly day than a delicious bowl of homemade chicken noodle soup. It's like getting the best hug ever from a old friend. 

In my recipe search, for the Crazy Cooking Challenge, I found several I liked but the one I selected to try came from...Not So Perfect Housewife. Unfortunately, when I went back to learn more and to introduce myself and the challenge, I realized that there had not been a post since 2009. This makes me kinda sad. I loved reading about this family and her other recipes look really good, too. Being a newbie to blogging (almost 200 days!) and running into this silent blog makes me wonder what the average blog life is? Anyway, I digress....back to the challenge!

I made a few modifications to the recipe just because of what I had on hand and it still turned out awesome! We've even had it for lunch a couple of days and it was still yummy!

Creamy Chicken Noodle Soup
3-4 lb chicken
4 quarts of water
3 t. salt
3 chicken bouillon cubes
3 celery stalks, chopped
1/2 onion, chopped
3 large carrots, chopped
1 1/2 t. onion powder
1/2 t. poultry seasoning
1/2 t. sage
1 t. celery salt
1/2 t. pepper or to taste egg noodles
1 (13 oz) can evaporated milk  
1/4 c flour

[NOTE- I substituted 2% milk for the cream and added 2 cans of Cream of Chicken & Herb soup and omitted the flour] 

Directions: Add water, salt celery, onion, chicken, bouillon to a large pot and bring to boil. Reduce heat and let simmer for 1 1/2 hours. When the chicken is done, remove it from the pot to cool and de-bone. You may have to strain the liquid to remove any large pieces.
Add vegetables and spices to the broth. Depending on the type of egg noodles, you may need to add them at this time. If you don't add the noodles at the same time as the vegetables, cook the vegetables until tender and then add your noodles and cook according to package directions (approx 10 min.). After noodles are cooked, reduce heat so soup is no longer boiling. Add cream with flour to soup to thicken. Add chicken.

  2. Hi Rachel! Yes absolutely, I've used Swanson's Chicken broth many times. However, I would still add the bouillon. I just like to have that rich homemade flavor and if you aren't making your own stock, I think bouillon or poultry seasoning is still necessary. I think you'll love this if you love soup!   9. This looks delicious! My whole family LOVES chicken noodle soup! We use skim milk so should I stick with the evaporated milk & flour, or would I be ok using skim milk & 2 cans cream of chicken? Got my vote!!

    Thank you! The skim milk will work fine! I substituted 2% and it just makes it less creamy but I really don't think the flavor was affected much at all. I would definitely still use the cream of chicken soup. I like my soup to have a definite chicken flavor. If I am making homemade stock/broth I'm going to have great flavor (from the whole chicken parts) but if I use a store stock/broth, I always add lots of flavor via cream soups, bouillons or poultry seasoning. You can taste as you go to get it the way your family likes it.

  19. Jennifer, Thanks...spent lots of time on the photos. The 2% is what we usually have on hand, I do believe the heavier the cream / half & half, the creamier and better the soup...just not as healthy!
