Easy Buttermilk Waffles makes breakfast a treat!

Big breakfast weekends are the best! They have the feel of a get-away B&B weekend, but at home. A big breakfast weekend happens when the weekday rush gives way to favorites that take a bit more time and attention in the preparation - pancakes, biscuits and gravy, or, this past weekend's feature...waffles, which were a end-of-holidays treat!

In the event that some of you may have been recent recipients of a waffle iron (Are we the only house to get Christmas appliances? no?), this recipe might be timely for you! Enjoy!


Waffle batter, flour, waffle iron, eggs,
blueberries, and pecans
The batter will be really thick but the waffles are light with a crispy, golden outside.
Waffles
Scald 1/2 cup of corn meal with 1/2 cup of boiling water.
Add: 1 cup of buttermilk
           1 egg
Beat well
Stir In: 1 1/2 cup self-rising flour
Then add: 6 T. melted shortening
  
Spray the waffle iron with non-stick spray. Add batter to waffle iron and bake until browned or until the timer tells you its done.

Note - we add pecan or blueberries once we've poured the batter on the iron.
These waffles may be mixed the day before!  This recipe makes 6 Belgian (large extra-deep) waffles. 

When preparing pancakes or waffles, prepare a double batch and freeze the extra for quick weekday breakfast treats or to serve up in a waffle and ice cream dessert!

  1. My boys LOVE waffles!! This is a much easier recipe that I'll definitely have to try :) I too make an extra batch of waffles (& pancakes) on the weekends so that my boys can have a warm breakfast before school. As a treat I sometimes add chopped (cooked) bacon or chocolate chips to the batter before pouring. Although, I personally prefer the blueberries!

  2. Yum, I've never tried bacon waffles! That would be a treat! I'm glad that this recipe might be of benefit to you! It is such a time-saver that you can freeze them and just reheat as needed. I love the blueberries too and since they have health benefits I don't feel so bad about eating waffles. ha-ha Thanks for stopping by and for the comment!

  3. I love buttermilk pancakes, so I know I'll love buttermilk waffles. I've never froze the leftovers, but I do know they stay well if covered in the fridge for a week. pre-make them, don't cook all the way, freeze and then finish them, really quick.
