Easy Chicken Alfredo & Broccoli Dinner

When I began cooking most of the family meals due to my mom's RA, I was her hands so Mom taught me lots of simple, easy-to-follow recipes. My dad worked for Kraft Foods for many years; so it was just natural that one of my first recipes was Alfredo sauce from the Philadelphia Cream Cheese box. I haven't seen it printed on the box in a long time even though the boxes still feature recipes on them. Nevertheless, this was one of my favorites to make because I felt like a real cook and it always got rave reviews.

I think this recipe tastes so much better than the new bottle versions on supermarket shelves now and, although I haven't compared the nutritional differences, I can't imagine you can beat these four easy ingredients - cream cheese, milk, butter, and Parmesan cheese...that's all it takes to create a great Alfredo sauce!

Here is the Philadelphia Cream Cheese recipe for 15 Minute Creamy Alfredo Sauce from back in the day.

1 8oz, pkg Philly Cream Cheese, cubed
3/4 cup Kraft Parmesan Cheese
1/2 cup butter (whatever you normally use)
1/2 cup milk
Note - the original recipe says pour over 8oz of pasta but we think this recipe is plenty for 16 oz. of pasta.

In a medium saucepan, stir together cream cheese, Parmesan cheese, butter, and milk over low heat until smooth. Pour over cooked pasta and toss lightly.

Before starting the sauce, I usually start baking a couple of chicken breasts and cooking a pot of Dreamfield's linguine or spaghetti. If I have it handy, I like to steam some broccoli florets in the microwave to top it off. As you can see, this meal can easily come together in about 30 minutes. You'll get rave reviews, too!
