The Shady Porch: Slow Cooker Chicken Stroganoff

Slow Cooker Chicken Stroganoff

I've always felt like winter is the perfect season for using the slow cooker. I'm not sure why since I use mine year-round, but it just seems right to have the aroma of a home-cooked meal in the house throughout a cold winter's day. It gives the comforting feeling that we are ready for whatever Ol' Man Winter wants to throw at us.
Although we've been blessed with a mild-ish winter in our region, I've been using the slow cooker a lot! Today, I wanted to share the latest recipe - Slow Cooker Chicken Stroganoff.

Slow Cooker Chicken Stroganoff
This makes a rich, creamy sauce that is delicious served over egg noodles or rice.

Ingredients
3-4 boneless chicken breasts, cut up into bite-sized pieces
1/2 cup sour cream
1 pkg cream cheese, cubed
1 sm. diced onion- optional
1 cup mushrooms, fresh, sliced -optional
2 T. butter, softened
2 T. minced garlic
1 can cream of mushroom or cream of chicken soup
1 pkg dry Italian Salad Dressing and Recipe Mix (* you can substitute w/Ranch mix too!)
1 pkg or egg noodles or rice
[Photos L-R] This is the cubed chicken mix after cooking. The middle picture is after adding the cream cheese, etc. and the final picture is after the sauce has been incorporated into cooked egg noodles.

Directions - Stir the chicken, butter, onions, garlic, mushrooms and Italian dressing-recipe mix into a greased crock pot and cook 3-4 hours on high.
Now stir in the sour cream, cubed cream cheese, and soup; cook an additional 30 minutes or until heated through.  During this time, prepare your noodles (we used egg noodles) or rice.
Note - this also tastes great topped with steamed vegetables like broccoli!
